                • I roasted half a cauliflower with miso, sesame oil and soy sauce earlier - quite tasty. However, I have just eaten one of the best things I have ever eaten in my life! I've baked a couple of large onions in the oven for a very long time (topped and tailed, but skins on) - I wasn't really keeping track, but I think gas mark 6 for a couple of hours (I just stuck them in when I was baking other things). I lifted them out once they were very soft, peeled one, added a dab of butter, a sprinkle of salt and a grind of black pepper. I have then eaten them on some rather sad old buttermilk crackers. Still absolutely delicious! Can't believe I've never had onions prepared like this before when they are so good.

                  • This evening we're finishing of yesterdays beef and veg casserole.

I've roasted onions along with veg but never tried them in their skins that way SC, thanks for the idea.

                    • Roasted mixed veggies with sausages tonight

(Roasting garlic in their skins makes them creamy and sweeter)

                      • Last nights open sandwiches changed slightly. Fried sliced sourdough in oil seasoned with salt, pepper, garlic and oregano then spread them generously with Borlotti hummus and topped with lettuce, land cress, cubes of soft goats cheese, chopped sun dried toms and lightly toasted walnuts.

Might do something with fish today.
