Cooking Tonight #5

  • I'm not sure what to cook tonight as I don't know if Mr GF will have had a meal or not before he makes his escape. I've got some beef stew cooking in the slow cooker. We can have that tonight or tomorrow ... or even freeze it. I've taken bread rolls and homemade potted meat out of the freezer. We can have that tonight or for tomorrow lunch with olives and cherry tomatoes. Obviously there is also the option of poached eggs or cheese in some form or another.

    I'm sure ice cream lollies will be on the menu too.

    I've also been investigating recipes online similar to prawn and scallop gratin but without the prawns, as the last prawns we've had were been a "bit" tough and chewy. I'm thinking of topping the scallops and sauce with piped mashed potatoes too, a bit like Coquilles St Jacques. (I think I'm getting my appetite back.)

        • Looks like Wednesday will be burgers, blue cheese dressing and salad night for the duration. So little effort, but still delicious. Ice cream for afters, following Mr GF's lead.

              • Seem to be going all Greek at the moment. Spetzofai - sausage, peppers and tomato casserole with some added beans as there aren't that many sausages. Ages since we've had this and it's an old favourite.

                    • I blitzed some of the stew that I made yesterday, topped it with mashed potatoes and grated cheese (a sort of cottage pie), and served it with peas and some of the stew gravy. Amazingly, Mr GF ate the lot. He thinks stew is too chewy and mince is too gristly. This, obviously, was neither chewy nor gristly. I enjoyed it too.

                        We’ll be finishing off the pork in a creamy mushroom pasta mix
                        And I’ve made an apple and blackcurrant crumble and rice pudding for pud.

                          • Salt cod with courgettes and toms plus rice. Melon maybe for pud.

                            All change. Feels like we need something a bit more celebratory after our helpers' efforts. Traybake with roasted onion, sweet potatoes, carrots, parsnip and confit de canard. Might see about bunging some curly kale in as well.

                              • I made aubergine parmigiano. We had it with garlic bread and extra parmesan. Tomorrow I'll probably add some chicken stock to the leftovers, blitz it, and call it soup for lunch.
