Last night's duck spring rolls with the stir fry was a big hit. Everything imaginable, both fresh and frozen went into the stir fry, even some leftover lambs lettuce. I then mixed some fat noodles into it and some "sauce" made from honey, soy sauce, vinegar, garlic, ginger, and a sprinkle of chilli flakes.
Tonight I'm thinking cheese and onion crispbakes, ratatouille, and stuffed portobello mushrooms.
More melon.

I was fancying takeaway fish and chips until I realised that it is Saturday. My favourite chippy doesn't open Saturday evening.
... or any late nights. Long gone are the days when the world and his wife called in for fish and chips walking home from the pub at chucking out time.
I think I'll roast a small chicken in the air fryer. It should only take about 40 minutes. I think we'll have it with garlic bread (five minutes in the air fryer), and a big salad.

A tumble salad of sorts. Not quite sure what the main guest ingredients will be yet though.
Deffo melon either for starters or pud. They are really delish at the moment!

We still have a good half chicken to eat up. I think we'll have it with butternut squash and spinach croquettes (bought from the supermarket), leftover ratatouille, and corn on the cob.
I'll then stick the chicken carcass in the slowcooker to make stock this evening.
We've now finished all the fresh melon, strawberries and pineapple so for dessert I'm thinking of making a mini trifle with frozen raspberries.
