Last night's chicken, cooked in the air fryer was gorgeous, one of the nicest chickens I've ever eaten. No special cooking, just sprayed with oil, which I then massaged in, sprinkled with salt and two halves of lemon stuffed inside. I even forgot the tarragon.
Tonight I think something that uses up more chicken and I'll bung the carcass in the slow cooker to make stock.
Jelly of some kind.

Last night we ended up having chicken risotto. Raspberry milk jelly with raspberries in it for pudding.
Tonight was going to be scampi, homemade tartare sauce, Jersey Royals, peas and carrots but the weather is now cold, wet, windy, and miserable, particularly when compared to the last few days.
The remains of the chicken carcass, together with some onion, carrot, celery and herbs, are simmering gently away in the slow cooker, turning into stock, and the smell is alluring. There is also a bit of chicken meat left in the fridge, and I'm now considering making some warming chicken soup instead.

Make lettuce soup. Lots of recipes online. Freeze it for a taste of summer later in the year if you can't face it now.Originally posted by Nicos View PostAbsolutely no idea.

So…wandering around the supermarket whet my appetite!
Salmon and broccoli in a creamy sauce rolled in pasta.
A side salad of lettuce.
Pud…well, I couldn’t resist a passion fruit cheesecake
Today, either eat out at lunchtime, or have roast pork, broccoli and sweet potato later…or, cold roast pork in a tumble salad.
Sadly no crackling offered with roast pork joints over here"Nicos, Queen of Gooooogle" and... GYO's own Miss Marple

A few nibbles, (baby tomatoes, olives, and cubes of cheese).
Salmon baked with lemon and capers, potato salad, (I cooked extra new potatoes yesterday), corn on the cob and courgette fritters.
