Last night, a bit more chicken with a white bean, courgette and pea concoction. Yogurt with blueberries for afters.

I bought a nice piece of salmon, so certainly enough for tonight and tomorrow with our potatoes and runner beans with a creamy lemon sauce.

I've got loads of aubergines, tomatoes and peppers that need using, so I think I'll take the simple one pot route and roast them down slowly to make a thick chunky, gloopy sauce with lots of evoo and herbs. I'll have some tonight with some kind of bean chucked in and sausages that need using, then I will freeze the rest if there is room!
