Tumble salad tonight using the last of the Guinea fowl and another of our cucumbers. Just as we finish one then another appears from the garden to add to the stack in the fridge!

The aubergine parmigiano was a huge success yesterday. I'm still playing around with the recipe. Last week Mr GF called it that gorgeous stuff. This week I made it with parmesan and mascarpone, and he cleared his plate as fast as me, mopping any dregs up with his garlic bread, unheard of recently. It is his new favourite.
Today I think I might make a risotto. Probably pea, sweetcorn and salmon. Maybe a dollop of leftover mascarpone stirred through to up Mr GF's protein and calories a bit.
Probably a cornetto for Mr GF. Cheese and crackers for me.

Mr Snoop has discovered American style pickled cucumber. I think he came across a jar in Lidl. Absolutely loved them and now buys anything even vaguely resembling them and is always disappointed to find it's not the same thing. I'll give that recipe a go. Thanks, GF.
Glad the aubergine parmigiana is proving a success. Really nice with ricotta as well.
We're up for leftover roast chicken. Might do green beans, carrots and fake roast potatoes (parboiled and finished in a frying pan).
