The version I make is very straightforward (not the Claudia Roden version but more local to here): essentially fry a head of garlic, a sliced potato, some black sliced black pud and halved toms in a shallow oven-proof pan till mostly cooked and nicely coloured. Remove and mix dry rice, cooked chickpeas and stock or water in the bottom of the pan, scraping up any tasty bits stuck on the bottom, place the garlic on top in the centre and arrange the potato, black pud and toms around it. Then bake in a medium oven till the rice is done. You can add some spices or herbs to suit your tastes or fry an onion at the start and leave that in with the rice and chickpeas. Lots of recipes include currants or raisins too. If you're using water instead of stock, you can flavour and colour it with a bit of passata or tinned tomato. Amounts to suit the number of people and stock appropriate for the amount of rice.
Edited: the best toms for this are Colgar or hanging tomatoes. Well worth growing for this kind of dish, for fried breakfasts or toms on toast.Last edited by Snoop Puss; 12-03-2026, 11:43 AM.

Birthday meal!….whelks to start , Skate and prawns in a buttery lemon and caper sauce with fresh asparagus and tiny baby new potatoes….followed by apricot flan and cream.
Do help yourself to a slice of apple flan…there’s plenty to go around

Well after yesterday's "taste the difference" ready meal fish pie, which included hard as rock tough prawns and not enough sauce for me, today I've just raided the fridge and gone back to quick and easy basics. I made some smoked mackerel pate (smoked mackerel, mascarpone, lemon juice and horseradish sauce) and have had some of it with garlic bread and a side of olives and cherry tomatoes.
Maybe I'll have an ice cream lolly next.
