Anytime they are big enough and still shiny is good for harvest. Aubergines are always eaten when still botanically under-ripe.

Nestled somewhere in the Cambridgeshire Fens. Good soil, strong winds and 4 Giant Puffballs!

Now I am a fully fledged member of the aubergine growers club I want to make the most of my first harvest.
What are your favourite ways to cook or recipes for enjoying this yummy veggie?Nestled somewhere in the Cambridgeshire Fens. Good soil, strong winds and 4 Giant Puffballs!

Or as in the pic below, scored and drizzled with a mix of olive oil, hot chilli, garlic and sea salt and oven roasted (fan oven 180 degs) for about 30 mins
