I stripped the last of the chicken meat from the carcass yesterday and made stock, for the freezer, in the slow cooker with the bones and skin etc.
I think I might make the last of the meat into coronation chicken and have it with a big salad and bread and butter. There's a few Padron peppers left that we'll have as well.
Last of the mandarin jelly for dessert.

Last night's coronation chicken was a hit with Mr GF. The recipe I use needs mango chutney as an ingredient. I didn't have any, so I used date and apple chutney. It was a good substitution. Mr GF poked at the chicken with suspicion, asked what it was, and then actually tried it. He ended up polishing his plate.
Tonight I think we'll have salmon risotto.

I think today will be scampi, potato wedges, and peas with a side dish of Padron peppers and homemade tartare sauce. (My supermarket has had an offer on fresh fish and seafood for the last couple of weeks. Mix and match, buy any 3 and get the cheapest one free).
