  • Last night I made a chicken pasta which Himself actually enjoyed despite the peppers etc. I didn't give him a choice!

          • Large battered fish fingers with crispy bakes and naked beans.

            The treacle sponge was light and delicious and took only 4 minutes in the microwave - a revelation!

            • Tumble salad tonight…not sure what the featured meat will be though…chicken/ salmon maybe?

              I’ll probably make a fresh fruit salad for tonight…and a diet trifle for tomorrow (using mixed frozen fruits from the garden)

                I know when one of my nieces went to university I gave her a couple of large teacup shaped mugs and a recipe for microwave sponges that she could make in a mug. She tried all varieties and loved the fact that it was nigh on instant.

                      • We are having chicken breast, cut in two and hammered and maybe breadcrumbed . Served with broccoli and winter mash, and maybe with a peppery mushroom sauce.
                        Followed by the diet trifle I made yesterday

                        • These breadcrumb coated foods sound delicious. I keep promising myself that I'll zap half a loaf of bread and freeze the crumbs flat in large freezer bags so that I've always got some handy.

                              • Well done Nicos thats what I will do, i have some breadcrumbs. I also have a paste to test. I might coat some in paste then do the breadcrumb routine on top. Will have with new potatoes an salad and pretend it's warm and sunny
