Cooking Tonight #5

  • As I have remembered to take some Bay scallops out of the freezer to defrost tonight will be roast vegetables with feta cheese and Bay scallops. I'll cook and mix in some couscous or noodles at the end.

        • Another mezze style lunch. Pretty much the same as yesterday with the addition of goat's cheese and padrón peppers. A couple of Lindt chocolates for afters.

          Doubtful we'll want supper. Maybe some soup if so.

            • Jacket potatoes filled with mackerel, peas, pesto and spring onions. Will probably have salad on the side.

                  • Tonight was the scampi we should have had yesterday. Yesterday ended up being a justa.

                    We've just had some very basic thickly buttered toast with a smear of Bovril for supper. It was very enjoyable. It was my favourite snack when I got home from a night out in my teens.

                          I managed to find a bag of large spuds which will fit the bill for making a few wreaths and will be perfect for jacketing… A very lucky find , so am now looking forward to having jacket spuds when our granddaughter comes out ( one of her favourites!)

                            • Roasted leg of sheep for lunch with 2/3rds of the kids. With roasted King Edward's & 'snips, Peruvian sparrowgrass, Spanish 'tenderstem' broccoli and sprouts.

                              The cooking was interesting:-
                              The bearings on the motor for the fan oven's* fan had started howling last night as I warmed the plates for a fryup.Took the oven apart and re-lubricated the bearings, but wasn't hopeful.

                              Today it struggled on with the fan stopping and starting for three hours, cooking a meal that should have taken two for the meat and one for the veg. The Lamb was very rare and the parsnips and spuds weren't crunchy like the family normally prefer.

                              Just finished four hours of online shopping to order a new oven and microwave oven for delivery on Wednesday.

                              Just have to hope I understand the instruction manuals by Christmas.

                              Bloomin' oven was only 25 years old and I'd already replaced the fan motor once. The Microwave is coming up to 40 and still working, if not very powerful by modern standards.

                              • ^Roasties and parsnips can be finished off in a frying pan in an emergency. I only have a smallish oven and do this quite regularly.

                                Sorry to hear about your oven, by the way, Mark. Hope the new one brings you lots of cooking pleasure, though.

                                Roast pork chops with apple plus cabbage and bacon and parsnips. Mandarines for afters.
