  • The aubergine parmigiano went down a treat last night again. The first time this week that Mr GF has wolfed down every last mouthful. I'm still experimenting with the recipe. This week I baked/roasted the aubergine slices after brushing them with oil, instead of shallow frying them. Equally as good, less effort. Maybe I'll try them in the air fryer next time.

    Tonight I'm going to roast a small chicken in the airfryer. We'll have it with a big salad and garlic bread.

    Ice creams for dessert.

    • ^If you've got time, dipping the aubergine slices in flour and egg before frying them makes them really delicious. They don't absorb quite as much fat either. Roasting is healthier, though.

      Aubergines here tonight. Brinjal bhaji with rice.

      Freekeh with feta cheese and assorted other bits for lunch.

      Bread and more lollies to make as well.

            • I think I'll make pastry, and then a chicken and mushroom pie with some leftover chicken. We'll have it with potatoes of some kind, new or mashed, french beans and carrots. If we have mashed I'll make extra gravy.

              I'll also put the stripped chicken carcass in the slow cooker for a few hours to make stock.

                            • I'm thinking of making some cod goujons, in beer batter, to have with sweet potato wedges and peas or salad. Tartare sauce.
