The aubergine parmigiano went down a treat last night again. The first time this week that Mr GF has wolfed down every last mouthful. I'm still experimenting with the recipe. This week I baked/roasted the aubergine slices after brushing them with oil, instead of shallow frying them. Equally as good, less effort. Maybe I'll try them in the air fryer next time.
Tonight I'm going to roast a small chicken in the airfryer. We'll have it with a big salad and garlic bread.
