Black garlic

I have just been reading about how wonderful black garlic is to cook with. Has anyone grown it, is it the same as the other type

Black garlic is standard garlic that has been fermented at specific temperatures till it is sweet, dark and jellied, so it's not a raw product

I would love to try black garlic myself. I only heard of it recently when a customer asked me if we sold it.

I had some black garlic last year. It appeared to be covered with sooty mould which washed off quite easily!

You can buy black garlic.
But you grow your garlic and then heat it in the oven.

The boy did it several times, and it's very tasty. We've only got 40 cloves planted so we won't be able to have as much of it as we'd like this year

Any ideas how long to heat it in the oven, does it taste better......is it worth it?

60c is an awkward temp to maintain. Might have a fiddle with our slow-cooker when the garlic's ready.

It seem this process softens the garlic taste but concentrates the health aspect of garlic, it is not so pungent. Also combines the natural sugars to give slightly sweet taste. I wonder if the airing cupboard on top of the boiler would do it over a longer period.

I wonder what temperature you could maintain in a heated propagator and whether it could be used during the summer months for something other than seeds Seems a shame to have it sitting around doing nothing
