Personally I put less water in as its a bit thin for my liking, but good with a bit of doctoring.

Just cut them up into slices or chunks and put them in the freezer. Best cooked from frozen.

Some of us live in the past, always talking about back then. Some of us live in the future, always planning what we are going to do. And, then there are those, who neither look behind or ahead, but just enjoy the moment of right now.

Which one are you and is it how you want to be?

Thanks Alison, I wasn't sure whether I needed to dry a bit them in salt first.

If you grate it and then freeze it, you can use it in baking, or sprinkle it into your cooking

Oops..forgot to say mine so far!

                Strawberry and raspberry jam
Raspberry and chocolate ( coco) jam

I've just bought oranges for my annual preparation of Calvados'44' ( but that doesn't really count as I didn't grow the oranges! )
So far we're eating up the first of our courgettes, but I can see the glut may soon be upon us!

I've been playing in the kitchen again today as it's raining.
I can now add to my list
pickled cucumber, a 2lb jar of it! (So it better be good)
Chilli plumb sauce x 3 jars.
