    Default Pickled Courgettes

    Possibly my favourite courgette recipe!!

    Pickling mix:~500ml cider vinegar
    120g sugar
    1&1/2 tsp dry mustard
    1&1/2 tsp crushed yellow & brown mustard seed
    1 tsp ground turmeric

    500g courgettes
    2tbsp salt
    1 sm onion

    1.slice courgettes &onoin very thinly into discs(easier with a mandoline!)Place in bowl~add salt & mix well.cover with very cold water & stir to dissolve salt.
    2.after 1hr drain & dry thoroughly~either in salad spinner or between towels.
    3.Combine pickling mix in saucepan & simmer for 3 mins.set aside until just warm.
    4.Mix courgettes & onion with the cooled liquid.~transfer to sterilised jars.cover & refrigerate for at least a day before eating.
    Will keep indefinately in fridge.

    Absolutely yummy with cheese & crusty bread!
    can also add dried chilli flakes to the mix for an added kick! ENJOY!

    How thin do you slice them, does about 1/4" or so sound ok?

    As thin as you can,I use a mandolin....obviously not of the stringed variety!....the finer the better!...IMHO!
    You do need to try it though,I didn't like the sound of it,but is now my favourite pickle!

    Have made a note of this recipe, am growing courgettes but am not a massive fan (my mum sowed the courgette plant from seed and I didn't have the heart to turn it away). But this sounds like a fab way to use them!!
