Banana Shallots

    Get a couple of potatoes and bung them in the microwave to cook, in their skins. Take some of your onions, skin and slice thinly-ish. Heat up some oil in a frying pan and lob in the sliced onions and cook until transparent. While that's happening, grab a couple or three eggs and crack into a cup, beat with a fork (making sure that no shell goes in - which I failed to do).
    When potatoes are cooked (? about 7-8 minutes), slice them thickly.
    Add them to the frying pan with the onions and continue cooking until the potatoes brown: turn them over and cook other side.
    When browned, pour the eggs over the potatoes and onions. keep cooking until the egg is set. Add some sliced cheese to the top if you like until it melts.
    Voila, a meal cooked (and eaten) while I've been posting messages here!

      Its a magic recipe for using up any odd veg - or left over cooked veg - in which case you call it Spanish omelette. The original one I call Potato and onion omelette - original, n'est ce pas?
