      smash one with bare hands. I skin starts to feels like it is burning then they ripe.

          They're perennial in the native climates, so with some care can be over-wintered. There are a few links around on different ways to attempt to overwinter them...here's some:

                it's been in a pretty small pot, have been meaning to fertilize and move to a bigger one but they seem to be doing fine!

                  Scotch Bonnet grown outside in Forres, Moray



                  Pictures taken last month.
                  This week they started to turn orange.
                  Size from 5mm to 25mm width.

                  Will wait 2-4 weeks more, or until the cold harms them.

                  Will post before crop.

                  Anyone else this far north grow Scotch Bonnet outside?
                  What are yours like?

                    Sounds like your have been on the sage Manda.

                    Do you not have to remove the seeds before freezing?
                    How long do they last frozen?

                    Any one make a relish yet?
