    Shred and use in coleslaw.

Use like vine leaves and wrap meat/veg parcels.

Put the green in stocks and soup base.

Wrap up herbs and tie with string for bouquet garnis.........

Had a sudden desire for leek and potato soup after reading this. Just been and dug up some leeks and now bubbling away in pot. Thought I was mad digging up leeks in the dark, but now I can smell soup cooking and know it was well worth it.

My 'green' leftovers go to the nags, my old mare loves brocolli stalks, cabbage stalks etc

Don't usually use much of the green bits especially the thick tough bits. Probably because I don't need to. Only the two of us to feed and I put in about 80 leeks, so no shortage.

Good point Flum! I wish Mrs snadge wouldn't chop, what is probably the best part, off the cauli and PSB!

Now you've put me in the mind for leek and potato soup.

Not having them growing, when I go out to the shops later, I'll be buying some.

i love leek and potato soup! does have a tendancy to upset my digestive system though, if you know what i mean! but i use most of the green bits however i cook them, i think they taste a bit better than the white bits.
