I think you misunderstood. Fresh garlic is by far the best from your garden (as all fresh veg), but use it fresh. 'Wet' garlic is rarely available in the shops anyways. If you are going to dry/store garlic then I think you lose the advantage, the shop bought product is not bad and quite cheap, especially if you buy the nice rose/violet types from your local French market or onion man.
