    Good call buying designated ice-cube trays.
    I’ve frozen tomato, pesto etc in my normal ones…and the water ice-cubes do come out tasting a bit unusual at times

      I'm not really a herb person, but I do like my garlic chives, which are best in spring and I use in salads and particularly in tuna mayo sandwiches. Otherwise herbs are really restricted to parsley (if I can get it to grow) chervil, which is nice in salads, basil for tomatoes and salads and thyme, which I mostly grow for the flowers.

        I have a massive rosemary bush outside my back door. It’s starting to get a big ragged with age and I like to clip it back a bit to help it keeps its shape.
        So any clippings go into a vase of water in the kitchen. It looks pretty and when it finally dies I pop it in a box for burning on the kettle bbq to add flavour to the smoke.

        At Xmas ( ooops…I went and said that word again) I like to make a couple of wreaths for my front doors with twigs of bay leaves pushed into a potato then set off in the middle with dehydrated slices of orange. After New Year, those bay leaves go into the same bbq box.

          I think my favourite herbs are chives rolled in butter and new potatoes.
          I use a lot of basil, both fresh and dried, and combinations of marjoram, thyme and oregano, bay etc in casseroles.
          I’m not too keen on curley parsley but get through quite a bit of flat leaved parsley.
          Corriander is a favourite but it can be hit and miss for me growing it here. Sometimes it fails and other times it self seeds.

          Mint never does well for me as the roots dry out. I’ve tried various places in the garden over the years but none have been successful.
          A friend used to supply me with loads ( the roots of her plant were under a stepping stone so I will try this next to the new patio) unfortunately she’s now moved house so I don’t have the joy of being offered handfuls of mint!
          I used to make a lot of apple mint jelly with it , sometimes adding chilli for more depth.( Fantastic as a side serving with scrambled egg!)

          Lemon verbena is taking over parts of my garden. I grew it to drink as a tea but not in the quantities it now grows!
          It’s almost a weed but it fills a gap and can be easily pulled up or transplanted.

          Sage does well for me too. I love it with pork in a creamy apple sauce - as well of course in homemade stuffing.

            Like others have said, I use herbs in roasts, salads and in stuffing.
            I also use chives and parsley in scrambled eggs and omelettes.

              Is lemon verbena tea good Nicos I love the smell of the leaves but have always found commercial fruit teas to be more scent than taste.
              Nestled somewhere in the Cambridgeshire Fens. Good soil, strong winds and 4 Giant Puffballs!
