More or less the same recipe and method - slow cooking essential, that Herself uses - French onion is THE soup for the chilly winter lunch times.Originally posted by Aberdeenplotter View PostFrench onion soup recipe the recipe I am following
Today we are having brown lentil, barley and star anise soup, another of our winter favourites.
(Herself informs me that we shall have French onion on Tuesday or Wednesday next week).

My "herself" is away at her Mum and Dads doing their washing so I thought I'd give her a treat when she gets home as it's one of her favourites. Her parents are in their late eighties and live in a complex where there are shared laundry facilities. Her dad has until now looked after the laundry but he had a fall recently and can't manage the trek to the laundry room meantime. The installation of a condensing washer drier is now a necessity in their apartment.

What a lovely thing to do for "herself".
My OH is the onion soup maker in our house and it is sooooo yummy. I want some now.

I did do the bread and toasted gruyere and the soup was delish. Herself was delighted as she thought she was coming home to make herself a sandwich. Nice to have earned some brownie points and we have enough left for a lunchtime snack today as wellOriginally posted by Jeanied View PostMy one addition to the recipe is the spoonful of brandy that goes in the middle under the toast and grated gruyere cheese!

I do, just a good sprinkle of demerara. And also brandy like Jeanie, but just before serving. This is a soup I like to cook, but I'm not an eater of French Onion soup. I make it for the BH, who is a huge fan, because he spent a year in Paris when he did his Chef training many years ago.Originally posted by Aberdeenplotter View Postjust as an aside, do any of you add sugar to the onions to help the caramelisation process. I did last time but it was just too sweet and the onions are sweet enough anyway.

Pray for rain or snow, please people, then I'll spend a day cooking!
