  • Red Mustard Leaves

    I planted some mixed leaf salad last year and some red mustard leaves have survived the winter. I tried a leaf the other day and it has an amazing hot mustard flavour - do any of you have any suggestions of how I can cook this, the only way I have thought of is to wilt them with some spinach?

    They're best in salads but if you want to cook them will just take seconds. So wilt your spinach first then add mustard leaves at the last minute.

    I find microwaving spinach is the best way to avoid loads of water. Wash leaves, unless using baby spinach and "dry" in a salad spinner briefly. Put in large glass bowl, put lid on top (pan lid or plate) and nuke in microwave for 2-3 mins depending on quantity or how cooked you want it. Add mustard leaves about 30-60 secs before finished cooking.
