  • Can you freeze elderflowers?

    I'd like to try gooseberry and elderflower crumble but my gooseberries are nearly ready yet. I'm sure I've read somewhere that you can freeze the flowers but can't remember who, where...

    I should think they'd go black. You can dry them though.

      I was thinking more down the line of making a concentrated cordial to add to other ingredients later on? Don't know whether it's possible or the logistics tho!

        You can certainly freeze the cordial.

          dcefinatly freeze the cordial, add very hot but not boiling water to lots of flowers, leave overnight strain and freeze! voila.

              I didn't strip mine, but I did cut off most af the stalk though.
              I also added a fair bit of sugar too.......

                When my gran used to make Elderflower champagne (which was actually pop!) she used to float the umbels on top of the water!
