    You can use tea rather than grape tannin, I think - CJJ says

    "In flower and grain wines, add one tsp (5ml) of grape tannin....... or one tablespoon of strong tea per gallon, add half of that for other wines"

      When do I add the airlock to the bucket, It says in the second stage.

        Your initial ferment is the first four days in a bucket. When you strain into a demijohn then you ferment under airlock (second stage). I would add the tannin - Hazel put how much strong tea to use for a teaspoon of tannin. It will really affect the finished wine if you don't use it.

            No tannin in our elderflower recipe. Seems to work OK for us, but if you are using a recipe, use what the recipe says! (campden tablets are optional<g>)
            Flowers come in too many colours to see the world in black-and-white.

              Jackie, a quarter of a teaspoon of Marmite or other yeast extract is a good nutrient and a mug of strong (milkless!) tea a good source of tannin.

                  Just syphoned off the first batch of elderflower into a demijohn I have put a bung in and an airlock do I put the cap on the airlock or leave it off.

                      Leave it off. Just make sure the airlock has plenty of water in. By the way, is Tuesday a good day for you to come and see the field? I'll bring the coffee!
