  • Pickled Beetroot

    Just wondered if you clever preservers have any simple tips on pickling beetroot? Please note you are replying to someone who struggles to boil an egg!

    I roast whole beetroots and slice. Then put in sterilised jars. I make my own pickling vinegar but cooking up and infusing spices into white wine vinegar but you can buy already done. Then get the vinegar really hot and pour over the beetroot. Fill to the top and put a lid on (make sure it's got that plastic coating that protects against vinegar). Shake gently to remove air bubbles and distribute everything. Leave for a couple of months to infuse and then wat at your leisure. Other methods are available but that works well for me.

    Some of us live in the past, always talking about back then. Some of us live in the future, always planning what we are going to do. And, then there are those, who neither look behind or ahead, but just enjoy the moment of right now.

      I like pickled beetroot I make it the same as Alison but my favourite is a beetroot and apple chutney there's lots of different recipes so heres a easy one :-
