  • courgette and cheese loaf

    do try this; the smell while its cooking will make you salivate!!!!!!!!!!! tastes heavenly straight from the oven but equally as good cold enjoy

    Courgette and cheese loaf

    225g self raising flour
    1/4 teaspoon salt
    1/4 teaspoon cayenne powder
    1/2 teaspoon dry mustard
    125g mature cheddar cheese (grated)
    3 large eggs
    4 tablespoons milk
    200g courgettes topped and tailed

    Preheat oven to 180 or 160 fan gas4
    Line 2lb loaf tin with baking paper
    Melt butter and allow to cool (but not set)
    Grate courgettes (skin on)
    Mix flour , salt , cayenne, mustard , cheese and courgettes
    Beat eggs milk and butter together and mix well into dry ingredients
    Put mixture into tin and level top
    Bake for 45-50 mins or until top springs back when pressed

    turn out and enjoy!

        I take your roots, and raise you a full head of hair, plus extensions... but, how do you eat this? Is it like a savoury cake?

          we use it as a bread substitute with salad or soup with or without butter, you can reheat it and have it warm just ping it in micro for 30 secs

              dont know ive never tried, seems to last about 5 days wrapped in foil thats if it lasts that long in this house!!!!!!!!!!

                  OMG - my dream recipe! I've been chocolate and courgetting till I'm sick of it - but cheese and courgette is a totally different proposition. Please let us know the butter requirements - otherwise I'm going to fret all night on the internet!

                        And the answer to the butter question is... 75g in tiny dice! (found by googling!) - actually, no, I found it and google helped!

                          Tried this today. scrumptious! Definitely going into my recipies folder.Thanks, I've been looking for some different ways with courgettes.
