I grew potatoes in the ground last year and didn’t get round to digging all up…would they still be suitable to dig and eat now?

They are likely to have a lot of slug holes in them.

Quite possibly. I dug up several potatoes from last year when I dug the beg three weeks ago, and all were still in very good condition (they were sprouting, but the tubers were still firm and had no slug holes). Only one very large one made it to the kitchen, though, as all the others I accidentally sliced in half with the spade.
