Yacon?

I've grown quite a bit of Yacon both outdoors and indoors. The frost has touched the outdoor stuff and the top leaves are a bit scorched.
Would it be best to dig it up now and harvest the roots before we get a major frost?

I was also wondering whether I could use the pineapple tasting juice/pulp to mix with a load of small chilli's and make a variation of chilli jam?

Thereby lies a story...................I think some sod nicked him! There were four others that were bigger than him apparently and got the prizes Poor Onslow was left sitting on the fence, where I can only assume someone took a fancy to him!
I was working that day so couldn't make it to the weigh in but had arranged for Onslow to be picked up and entered.
Never mind, it was only a bit of fun, but i had grown quite attached to him!

Never mind, the string vest he pinched from Rab C will come in handy for summat I suppose!
He was very shy our Onslow, he hid under the bean wigwam for much of his short life. No sons or daughters to carry his name on either due to some thieving git!

As for the Yacon, No idea!! I had some roots once but read that you needed a JCB to dig them out so I left them where they were. Never seen them since.
Give it a go, if you don't try, you won't know.

I have left mine in the ground all winter in the past and they have survived so the choice is yours.

I remember reading somewhere that they should be left at least a month from flowering (and watered lots but it is to late for that bit). I have never dug them up that early to know how much truth is in that.

I don't think the tubers store very well so if you do dig them up use them sooner rather than later.

Dug one Yacon plant up this evening and there were some mahoosive tubers!

Took a couple home to have a nibble and they had no taste at all! Look like a spud, cut like a spud and taste a bit like a raw spud.

They are supposed to taste of melon and pear. They do have the crunchiness of water chestnuts though!

I wonder if the taste needs to develop with storage?

I've left my yacon in newspaper for a few weeks before eating and the flavour does develop a bit more.

I don't think that the tubers have any pectin in, so while the juice tastes sweet, it won't set.

I made yacon molasses last year and a litre of juice boils down to 100ml-ish. I really love it, but it does set off a fartichoke-style reaction both raw and from molasses for some people.
