Any reason why you can't eat winter squash early?

Cadalot, are those Barbara butternut squash? If so, they remain a bit green still even when ready to pick but the one in your photo still looks very green to me. I don't think it's ready yet.

Has anyone grown Georgia candy roaster, if so how did you get on with it? Here are some pics of mine, I know a couple of you will like the one sticking through the fence The 2 plants have started to abort some (which is understandable) I am tempted to harvest some more though.
