You can harvest them as small as you like - some people plant any left over weedy ones all-in-one-hole to then harvest as something rather like spring onions.
The younger / smaller you harvest the more you will need for a meal, and the fewer harvests you will get, so up to you on that point! If you don't have many I would suggest leaving them as long as possible - Christmas Din-dins maybe?
