Does said buckets have any holes in to allow the juice to drain??

I'm going to say that's the problem you have a bucket of mess compost bins usually contact the ground (bottomless) so when the contents are rotting away the juice just drips away you have a bucket of stagnant vegetable juice

Ok thanks for your help all. Have contacted the council and they have 2nd hand compost bins at the recycle centres so going to go and get one tomorrow and start again!
