spinach

i was asked on the weekend about perpetual spinach,can you eat the parsnip-like root?,i couldnt answer the man,so can anyone give me an answer?,mine have stayed out all winter and are now growing strongly so they are really worth their space on the veg patch..

It's related to beetroot, so I would have thought you can eat it. Mine hasn't passed the guinea pig test though: they won't eat the root, so I'm not going to try (it looks a bit tough)
