How do I harvest seeds myself?

Hi I'm sure that most seeds can be harvested but what I wanted to know is, I guess, which ones are reliable and easiest to harvest. I'm trying to save a bit on seed buying next year and thought perhaps I could collect some myself How do I go about it?
