I just prick mine out into module trays, the deep ones if you can get them. They don't need massive depth at this stage, just enough room to develop a decent root system before they go out. I usually leave them in modules until they're pencil thickness then plant them out into holes with a dibber.
How deep is the tray, CG? And how closely sown are they?
I ask because you might not need to prick them out if the tray is deep enough. Here, leeks are sold as plug plants when they're just three or four leaves, sometimes just two. They take really well and don't have such big root networks, so they're much easier to plant out. I multisow leeks like Charles Dowding in modules that are 4 x 4 cm and 6 cm deep. I allow 4 or 5 per module and plant them out at the three or four leaf stage at 30 cm apart each way. They grow on a treat. I never had as much success when I tried to grow them on to pencil thickness before planting out as I do now.
I don't bother to prick mine out. I just grow them in the tray until they are about 2-3mm diameter, then tip the whole tray out, pull them apart and plant them out. They always do well.
