Coir can be really deceptive with watering, it tends to dry out unevenly so the surface looks fine but it's bone dry underneath, or the other way round. Might be worth lifting the tray and going by weight rather than how it looks on top. Heritage varieties can be a bit more sensitive to that sort of stress than the modern ones too.
