Sage & Thyme

My sage last year was amazing it grew nearly 1/2 meter bush it was lush green till december & now it looks dead.

Thyme seems to have died but has a few little gold leaves on now. Its a big plant.

Do I cut either back will they return?

The best way to keep herbs tidy is to use them often. If you let them get too big the stems get woody and may not re-sprout when cut back.

I would certainly give them a trim.

if the thyme is still alive and not too big you can "drop" it.
this is done buy burying the plant deep so that only the top 2-3 inches are sticking out of the soil.it will then root and can be split into several plants at the end of the season.
If you cut it back hard however it may not resprout.
Also works for heathers, bilberries, cranberries & lingonberries.

I just chuck the leaves in a bag and bung'em in the freezer .....easier to get thyme leaves off stalks while frozen . Just bash the bag ......

With sage, rosemary and thyme there's no closed season - I pick them all year round, as and when I want them

I like to grow and harvest larger quantities of sage when it's at its best.rather than traipse down the garden in freezing mid december for a meager harvest of shriveled leaves,its also easier to give away dried

I'm not a big fan of sage - but yummy rosemary lives just outside the back door
