I think the serious grow for show dahlia exibeters take at the maximum 3 flowerers per tuber and as you said remove the 2 side flowerers from the stem and the earlier this is done the better the exhibit will look, and some exibeters will grow quite a number of the same verity to aim for 3 identical flowers which is not as easy as you might think

it may be a struggle to reach the top, but once your over the hill your problems start.
