Is it my imagination or do your own fresh eggs make the best cakes ever. If this is so, why?
scrambled eggs are brilliant too, don't need any milk to bulk te mixture out, just two eggs whisked together. When my hens stopped laying in November I had to resort to buying free range eggs from the man in the van who comes round every Friday. WHen I made scrambled eggs, it just looked wrong... so anaemic in colour that even my OH asked what was wrong with them!

. The Clear stuff (can't remember scientific name) is so different from shop brought eggs. The only way I can describe it is "tight" in comparison. I guess shop broughts have already started to break down by the time we get them - yum
