I'd recommend planting potatoes. They are brilliant for suppressing weeds and are fairly simple to grow. Then while you're getting other beds organised grow some veg in pots and start off others in modules ready to plant out when you've made the beds.
Loads of veg do well in pots.
I'd also decide where you want your fruit and consider planting bushes through black membrane or cardboard. It will suppress existing weeds but also make it easier to keep weeds free. Believe me weeding around gooseberry bushes is no fun!
