    What a lovely thread!

I'd go with apple...it'll be enjoyed for years to come both in the spring with it's blossom, but also at mealtimes.
    Maybe a red variety?
And as VC says...it worked for Adam!

My Mum always had a rowan in the garden - she said they kept the witches away!

Of course, if he's marrying a witch that could be a problem ops:

I'd go for something smelly too. A lovely scent on the breeze in the evening, very nice.

Apart from symbolism, I would favour something flowering at the time of their marriage ... and thus on each anniversary.

            Or fruiting
