I've made a 10" Christmas cake to order for someone this year. I'm just at the 'feeding' stage now, but I was only planning marzipan and something flat, like snowflakes or Dala horses, out of fondant icing.

Hi, Jules, yes, as long as you keep them dry and at an ambient temperature, they'll keep for yonks! I've still got the Cornucopia I made for my wedding cake - three years ago and one of my clients had a glass dome made for her son's Christening Cake topper. It's still looking good - apparently.
As to your cake try making flat work out of "Petal Paste" (available on line and at some good cake decorating shops). It sets like china and you can roll it out to be paper thin, so it's great for delicate work.
