Chris .currant are great used a a base flaver in gravies .pork and lamb take these flavours very well and adds a lot more depth of flaver than just reducing a little red or White wine .
Zaz as you said raspberry vinaigrette is a great flaver I use them on almost all my salads on the menu at work as it's such a versatile vinigarete and very simple to make ..
Prices do anger me at this time of year when there in season as we are spending maybe an extra 100pounds a week at work for the same product as we were in winter and the Gaul of it is that atleast half of what coming in now is grown in England rather than Spain,portugal and holland so much less milage but almost double the price?????
Also chris make coulis very easy to do and will last a few weeks in fridge or freeze well use them on most dessert ..add same wait sugar to berrys a little water to just cover bring to boil then turn down heat leave for 10mins or so then blitze with hand blender leave on low heat until it starts to thicken a little then pass through sieve let cool and store (summer in a sauce )
Thanks AP - by "do" I mean how to use them in cooking / cordial etc
They're not that nice raw!
In cordial is my speciality. Half fill a jar with fruit,(chicken tonight jars are good for this) top up with sugar, pour in as much vodka or gin as the bottle will take and then screw on the lid and give a good shake about. Repeat the shaking bit every day until the sugar is disolved and then be as patient as you can for a couple of months and you will have a jar full of nectar.
Gosh Flo - do it! I got Red gooseberries, Purple raspberries, Summer rasps and Autumn rasps all in one year and by eck, they produce some crops. I am pulling rasp canes out every day as well, and am in the process of renewing my strawb stock if T&M ever get them sent.
The purple rasp canes grew to over 7ft tall this year, and have had to be cut down to 5ft - just started harvesting them last week.
It's fruity madness and stuff that doesn't get eaten goes to make fine wine.
I hope you're selling your spare raspberry canes on ebay!

LOL Snadge - I've been scoffing raw gooseberries too! Who knew they were so nice RAW??? Okay all of you did but I DIDNT! WOW picked nearly 2KG Sat and more on Sunday! Mmmmmmm
Need to find a price for morello cherries now, already picked over 2 kilo and hopefully when I check the tree tomorrow the pigeons will have left some more to be picked ......

Am giving in on the prices of supermarket fruit I think - might not have room to grow them, but by heck I'll be out fruit picking (storing excess for winter use) as things come into season. Just wish I knew where some blackberry patches were in the area (and how to ID the rest) am naff at foraging! And I live in the country too!
Edit: On the plus side, the supermarket pricing I am basing my harvested crops total on this year is doing wonders for the money saved though GYO!
