Pickled Eggs Gone BLACK!!!

Does anyone have a valid reason why my pickled eggs have turned black.

I follow a recipe to the letter. A few jars are fine but one, which happens to be ours, not xmas pressies, have gone really black.

Are they still edible?

Mine are pickled in white wine vinegar and seem ok? Thay aren't black but they taste bladdy woeful!

Can't understand why yours have gone black apart from the only possibility that the vinegar was watered down in some way and they have went mouldy?
I had this happen with sun dried tomatoes last year. They were in olive oil and also went black and inedible!

I would have thought some sort of mould too, cant think of anything else it could be??

I recently found a jar of pickled eggs when cleaning out the laundry room, must have been there at least 2 years, and whilst I wouldnt eat them, they were the same colour as when I left them there.

How about sending it to the makers of 'I'm a celebrity', they can give it to the contestants to eat as one of their trials :0

Did you boil the eggs yourself?
If so you could have boiled the eggs for too long.
At one time I worked at a place that did hard boiled eggs (1,000 cases a day).the whites could turn a dark colour if cooked too long.
Older(10-12 days old) eggs are better for hard boiling as in fresher eggs are more difficult to skin(shell)
In the fresher egg the white sticks to the shell.

No, the whole yolks can go (if not black) a very dirty grey.

or cooling down too slow can cause that grey tinge around yolks too?

I think the dark outer edges of the yolk can be causd by boiling from cold? If the egg are genttly placed into boiling water it is supposed to combat this?
Still think the vinegar acidity hasn't been strong enough though for them to turn completely black.

Thats what they look like lol

It is the whole egg that has gone black, they were not boiled for too long and they were over a week old!!!

They were also done woth the same batch same vinegar as the other 3 jars and the are fine!

I dont seem to have much luck with pickled eggs, I had to throw the last attempt away, we tried to make pink pickled eggs/ beet eggs, and they went slimey and discusting!

The ones on 'I'm a Celebrity' that are black is because they've been fermented. In which case I would think it's something to do with the vinegar like Snadge says. I definitely wouldn't eat them...

I forgot to mention they have only been pickling for 6 days!!!
