Beetroot Chutney - I give up!

I've been trying to make this all night, well, from 7pm anyway. My beetroot are now cooked, but the other ingredients are still like water. Not a happy bunny.
Ive peeled the beetroot and now the kitchen looks like the Texas Chainsaw Massacre (you have had to have seen this in the early 80s!).
Decision made: it's all going in the slow cooker overnight. If it's ruined then fair enough.
I'm never going to do this again!

Has anyone else had any cooking disasters that you'll never do again?

did you peel it before you cooked it ,i cook my beets in a deep lidded casarol dish in the microwave,i fill it to just below the lid with the beets,and boiling water no more than1/3rd the way up full power aprox 30 mins,is a lot quicker and no splashing anywhere,with all the flavour still in,not boiled out,pop it in and it stops when is done,so no watching it,
i made chutney with some 2 years ago,was nice,but just beetroot choped up with sugar and vinegar,was not impressed with it,now on it's own in sandwich mmmmm,don't give up,have another go,

I made my own raviolli at my step-mum's a while ago, while the ravioli tasted great, my step-mum never stopped reminding me of the random places in her kitchen she continually found flour for months afterwards!

Chutney takes a lot longer than you think to cook....its like waiting for the Gas man...just after you give up and go out he turns up....

my grandma's easy beetroot chutney
all are prepared weights

8oz diced cooking apple
8oz diced onion
1/2pt vinegar
4oz brown sugar
1lb cooked peeled grated beetroot
pinch of salt to taste.

combine all ingredients except beetroot in a large pan
bring to the boil and simmerfor about 30 minutes until apple is very soft stir regularly to avoid sticking
add grated beetroot and combine well stir and heat for a furthrt 10 mins
jar up as appropriate

i boil up the beets washed but not peeled or topped & tailed, leave them to boil for 15mins then turn the heat off and leave them overnight so theyve finished cooking and cooled right down then just rub the skin off and top & tail them.

The "chutney" ended up being thrown away! Serves me right though, I should've given myself more time.
Thanks for the recipe phil - a much simpler one than I was using. If I do make it again, shall use this not mine.

Mint humbugs - blurgh still, even though it's nearly 30 years later. My BF and I made them one summer holiday (the joys of working parents) but where a bit heavy handed with the mint flavouring.

To hide the evidence of our shenanigans we ate the whole lots. Probably bounced off the ceiling for the rest of the holidays too with all that sugar/ LOL
