Unripe pumpkin recipes?

Any recipe recommendations?

Anything you can do with a courgette you can do with a squash, ripe or unripe.

That's where my unrippend ones will be going as soon as the chilli's are out of the way.

What fascinates me, SP, is how they seem to want heat rather than light to ripen. It's always the side of the fruit that's face down on the black plastic mulch that ripens first for me....

I'd be tempted to make a soup and sweeten with onions and apples. Never tried it, mind, so I can't guarantee the outcome...

That's weird and never happens to mine - I have to turn them, downside up, IYSWIM to ripen the uncoloured patches.
Perhaps your soil warms up more than mine does - who knows

Mine are normally the same Thelma but this year when I harvested they had done the same as 1Bee. The underside had coloured first. They were on a straw bed.
It has been a odd and somewhat disappointing year for the squash family.

They did it last year, too. Since they're on the black plastic, I assumed it had to be heat. Who knows? You can see it in the pic above - all the green ones with small orange patches were orange side down when i picked them.
