The Hedgerow hips are naturally much much better if they have a frost on them before you process them. However. You can put them in your freezer overnight, and that will do a similar job, and then you can process them the next day as if you had had a frost the previous night.
    Hope this helps.

... but we don't get a frost until February - so they're in the freezer. Nasty, thorny little beggars, I hate rosehips. Never again!

I've just picked 800g and my arms are shredded ( there was also a bramble growing through the rose bush!!)

they're going in the freezer now.
        So...my question is..

I've seen loads of recipes and they vary quite a bit!
        2lb hips
        1lb sugar
        6pts water

        to...
        2lb hips
        2lb sugar
        3litres water
...quite a difference...what do other peeps use??
( I'd rather it wasn't too sweet- but does the extra sugar preserve it better??)

Rosehip jam is widely made in Bosnia, both at home and commercially.
Tastes wonderful but takes a lot of preparing to remove all the seeds
