  • lettuce soup?!

    Hello!
    We've got a bit of a glut of lettuce despite eating salad pretty much every night.. has anyone ever done anything a bit more interesting with it?

    Yes you can use lettuce as party of ingredience for soup, but i would suggest not the main one, it's texture is to waterey when chopped and heated. It works nicley in Gaspatchio.
    Depending on lettuce type you can stir fry it, Chinnese leaf and even iceberg work well.

      You can make it into curried pea and lettuce soup.
      Melt some butter, sautee some onion (garlic and anything else you like) Stir in some curry powder, tandoori powder or your own favourite curry mix.
      Add some stock. Stuff in all the lettuce you want to be rid of and about a mug of peas. Simmer about 20 mins and liquidise. Serve ladled over some yogurt with the kind of bread you like.
      Not dinner party stuff but good wholesome food for lunch.
