If you plan on pickling try using balsamic vinegar, you'll never look back.

Can you advise on how to do this?

I've never pickled anything in my life - not a big fan personally, but we're growing beetroot on the allotment this year and i love raw beetroot in salad with a balsamic/olive oil dressing.

I think i'd like to try pickling them in balsamic to see what its like.
