Christmas Cake - Too Late?

    Try my recipe.

    we are on our second one now.

    No doubt will need a new one before xmas.


    4oz plain flour
    4 oz self raising flour
    salt
    2 oz ground almond
    6 oz butter
    7 oz sugar
    4 eggs
    20oz mixes dried fruit
    2 oz glace cherries
    3 tbsp. brandy or whiskey
    2 tbsp. milk

    rub butter into flour...... careful !!!! if you rub too much you end up with pastry

    Add everything else. Mix

    Bake for 2 hours gas 1.5

    Another 1 to 2 hours at less than gas mark 1 until a skewer comes out clean.


    Doesn't need maturing.

          I usually make Dundee cakes for hamper presents, but a colleague at work made this and brought it in as a treat for us - we fell on it like ravening wolves because it was SOOOO good! I am going to use it as an alternative to Dundee cake and it can be made quite last minute-ish. It will keep in a tin for a few days, but you won't want to keep it!

                Well, I managed to get it done today. I did start on Friday by pre soaking the fruit in brandy - but got sidelined by waterproofing the new shower and bath on Saturday. I decided to give it more brandy as an apology on Saturday.

                I ended up using the Delia recipe as we had the majority of the ingredients in the cupboards. So no specific shopping required.

                This is how it looked when it came out:



                I cooked it in a square tin for 2 reasons: I only could find a square tin in the cupboard and I want to make it into at least 4 cakes (I can only eat so much), the others will be part of hamper gifts (if it is any good!).

                Took 4 hours at 140C!

                Looking forward to feeding it and tasting it.
