  • Courgette cake that uses lots of courgette

    I have tried searching and can't find an obvious link to this recipe, so apologies if I'm telling you nothing new but this recipe is great. It uses at least one if not two courgettes.

    The cake is gorgeous with or without the nuts.
    I prefer to make it with sunflower oil and at some point I'm going to try it with less sugar.

    I don't ice it but use it as a base for fruit puddings with yoghurt, cream or ice cream. Just frozen a huge batch so not sure how it lasts in the freezer yet.

    PS Why is it that years ago I couldn't buy anything but chopped hazelnuts and now I can only buy whole ones that I need to chop? (No, I don't have anything electric to do the job.)

    I peel and grate courgettes and freeze in cake amounts .......

      I often use sunflower seeds instead of nuts, if you're using sunflower oil it would be a great mix.

        Which is grate(! ) but I have time to make cakes now and I won't come September and it takes planning to use the separate bits from the freezer - which I also don't do very well! Also my freezer is huge from when we used to do meat so I am glad to fill the space.

          I find the olive oil too strongly flavoured for cakes and would always use a milder flavoured oil
